Enjoy a simply prepared yet incredibly elegant seasonal dinner with our recipe for roasted duck. Served with a quick orange-port sauce, it easily becomes a winter classic you’ll be adding to your repertoire.
Ingredients:
4 (5 ounce) duck breasts
Salt and pepper, to taste
1 teaspoon ground coriander
1 tablespoon olive oil
½ cup port
¼ cup orange juice
¼ cup sugar
1 tablespoon butter
Directions:
1) Preheat oven to 400°F. Season duck breasts with salt, pepper, and coriander on each side.
2) Heat oil in a large oven-safe skillet over medium-high; add duck breasts and cook until lightly browned on one side, about 5 minutes. Flip breasts over; place skillet in oven and roast 10 to 12 minutes. Remove from pan and set aside to rest 3 minutes before slicing.
3) Meanwhile, prepare the sauce: Combine port, juice, and sugar in a medium pot; bring to a boil over high heat. Simmer over medium-high heat, whisking occasionally, until sauce thickens and reduces by about one-quarter, about 5 minutes. Add butter and whisk until melted.
4) Spoon sauce over sliced breasts to serve.
